I see signs

of spring all around! Happy spring! We made it!

I've been enjoying fresh kale from my garden. I planted the seeds last fall and winterized them in the garden all winter, and now they're doing great. The early leaves are delicious in salads, or my favorite, sauteed with olive oil, a little onion, pepper and fresh lemon!

I don't have any left from last year but I have a few seedlings hardening off now.
Our lunch yesterday was a green smoothie: for 2, use soft leaves from 4 pieces of kale, a 1" slice of fresh pineapple (trimmed), 8 frozen strawberries and some juice to thin it. I usually use either black cherry juice or mango peach; but any fruit juice would work. If you use fresh strawberries then add some cracked ice.
The color isn't very appealing but the taste is wonderful!
